We have been blessed with far more harvest than we expected for our first year here.
We canned Cherry juice, and made a little jelly
We canned about 10 quarts of apple juice/cider and hope to do a little more
We canned a few quarts of Tomato sauce and have set some other tomatoes aside we hope will ripen for use later
We froze about a gallon of salsa and used about a quart we had in the fridge
We got a few potatoes we have already used, I still hope to be able to glean some from area fields. (potato harvest is in full swing right now...)
We were blessed with raspberries from friends and canned, froze and dried some
We canned a little apple sauce
I have dried about 5 quart bags of apples and have about 3-5 more drying now...

I feel very blessed!
What I love hearing is how you are using what you are given. Over the years we have had similar opportunities. I felt bad this past week when a man from Church brought in a trunk full of squash - kind of like butternut squash and huge. He had cut some open and it was a rich orange inside and the meat of the squash was very smooth. I would have loved to have some but what would I do with it in less than two weeks before we move out of our apartment. I was so happy to see so many others taking some to use. I was also happy to tell them some ideas on how to use it. Yummy pie as well as breads and cookies and just plain eating it with butter and brown sugar. One of the many blessings of having some many friends is being able to share our harvests and bless each other. Love your blessings and that you see the Lord's hand in your life.
